Ingredients
1 large onion, chopped
2 tsp sugar
1/2 C Dashi Stock
2 tbs Mirin
2tbs Soy Sauce
1 tbs Sake or rice vinegar
1/2 lb beef (cut into 1/16” strips
1 C cooked rice
1 large egg
Instructions
In a medium pan over medium heat, toss the onions in sugar, then stir in the Dashi stock, mirin, soy sauce, and sake. Add the beef, stirring frequently and, and cook until the meat is no longer red, 5 to 7 minutes. Reduce the heat to a simmer, cover, and cook for 10 minutes. Slide the meat mixture onto a bowl of rice to serve.
If you’d like to put an egg on top, separate the yolk and white of the egg. Pour the white on to the meat mixture in the pan for the last minute to cook. Place rice in bowl topped with meat mixture and make a small well on top. Place the egg yolk in the indentation that you made.
